I can only help you with the first question, it seems like he may be scared. Why don't you try keeping his cage on the floor with the door open while you sit and read a book next to it? Then he'll see you are non threatening. I know this has helped with my rats. They did the same thing, but when I let them come out on their own they are completely different.
